1 chocolate cake mix
1/2 Cup canola oil or butter
2 eggs
Frosting
1/2 cup butter, at room temp
2 cup powdered sugar
2 Tsp milk
5-6 drops peppermint oil or extract
Toss into an electric mixer and blended well. Then make into small balls, I use a small ice cream scoop and bake them at 350 for 6 minutes. You will see them slightly crackle on the top. Remove and cool on a rack.
While cookies are baking, toss all the ingredients for the frosting into an electric mixer. If it is to stiff add a little mike to soften it up. Frost cookies when they are completely cooled. Now for the splendid chocolate Ganache.
In a small sauce pan toss in 1/3 cup butter and 11/4 cup semisweet chocolate chips. Heat on medium heat until melted, do not let boil. Remove from heat and let stand until it thickens enough to smooth over the frosting but does not melt it. Spoon over frosting and let cool completely. I stick them in the freezer for about 5- 10 minutes. Enjoy!
