1 cup apples, diced
2 Tbsp Butter
1 tsp Cinnamon
1/4 tsp Salt
1/2 cup Greek Yogurt
1/4 cup Applesauce
1/2 cup Milk
1 Egg
4 Tbsp Almond Butter
2 cups Oat Flour
1 Tsp Baking Powder
2 Tbsp Honey
In a electric mixer toss in the yogurt, applesauce, milk, egg and almond butter and mix well. Next you will need a small sauce pan toss in the butter, apples, cinnamon, and salt and cook this at medium heat until apples are soft. (about 7 minutes) Take this mixture and pour it into the electric mixer and toss in the oat flour and baking powder. Mix well. Then drop 1 Tbsp cookie dough onto a cookie sheet and bake 350 for 15 minutes or until golden brown. Remove and cool on racks.
Note- Oat flour is made by tossing in old fashion rolled oats (food storage item) into a blender or food processor until it is ground.
You can substitute 2 tsp Stevia for the honey or 2 Tbsp pure maple syrup.
