Honey Butter

We spread this on fresh, hot bread, cornbread and scones.  The real kind of scones (yeast) bread.  You can use any kind of honey.  Raspberry honey adds a wonderful twist.  It's really easy.

1 cup Honey (any type you like)
1 cup Cream
1 cup Brown Sugar (you can use white)

Toss everything into a sauce pan and bring to a boil on medium heat.  In a large bowl toss in 3/4 cup butter, at room temperature.  When the mixture comes to a boil pour this in the bowl with the butter and whisk until smooth. Makes 2 cups.
