1 boneless Pork loin roast
1 tsp salt
1/2 tsp pepper
1 cup cranberry sauce, ( I use my homemade version but you can use canned jellied)
1/2 cup orange juice
1/4 cup brown sugar, packed
IN a roasting pan place roast fat side up. Rub in the salt and pepper. Bake at 350 for 1 1/2 hours. IN a saucepan toss in cranberry sauce, orange juice and brown sugar and cook over medium heat until everything is melted. Brush 1/2 of this over roast then bake for another 30 minutes. Again brush another 1/4 of sauce over roast and bake another 15 minute or when a meat thermometer reads 165 degrees. Remove and let cool for 10 minutes before slicing. You can use the remaining sauce to serve over roast. ( you may have to warm sauce).
