1 onion, finely diced
1 carrot, finely diced
3 stalk Celery, finely diced
1 1/2 cups Butter, melted
2 Bosc pears, peeled and diced
1 cup chestnuts, peeled and chopped (1/2 pound)
8 oz breakfast sausage, cooked, drained, and chopped
1/2 cup parsley, chopped
1/2 cup fresh sage Leaves, chopped
8 cup bread, 1/2-inch dice (country type or french)
2 cup (up to 3) Turkey (Or Chicken) broth
Salt And Black Pepper
In a sauté pan toss in onion, carrot and celery with 2 tbs of the butter sauté for 10 minutes. In a large bowl toss in the pears, chestnuts, sausage, herbs and bread/ Add the onion mixture and add enough of the butter and broth to moisten the bread. NOT SOGGY just moisten. Season with salt and pepper. Prepare a butter baking pan and spoon dressing in and cover with foil. Bake at 350 for 45 minutes. Remove foil and bake for additional 20.
