Franks Carrot Cookies

1 cup shortening
3-4 cups sugar
1 cup mashed cooked carrots
2 eggs beaten

Sift together and then stir in
2 cups flour
2 tsp baking powder
1/2 tsp salt

Stir in 3-4 cups shredded coconut.

Drop about 2 inches apart on cookie sheet.  Bake until when you touch it it does not leave a finger print.  Bake at 400 for 8 to 10 minutes.  Makes about 4 dozen.
