1/2 cup vegetable fat
1 cup sugar
2 eggs, lightly beaten
2/3 cup milk
1 1/2 cup cake flour, sifted with
2 tsp baking powder
1/2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
2/3 tsp salt
1 1/2 cups stewed prunes, sliced and drained
1/2 cup walnuts chopped
Cream sugar and fat, add eggs and whip until frothy. Alternate flour and milk in mixing the batter, adding big spoonfuls of sliced prunes mixed with nuts along with the last third of the flour.
Line a sheet pan with greased paper. (I think this is parchment paper) spread batter evenly and scatter brown sugar and cinnamon over top of batter. Stick a few extra nuts into the sugar topping. Bake for 45 minutes at 350 degree heat but protect top of cake with paper after rising has taken place.
