1 1/2 cup sifted cake flour
1 cup sugar
3 tsp baking powder
1/2 tsp salt
1/2 cup egg whites (about 3 or 4)
1 cup heavy cream
1 tsp vanilla
Sift dry ingredients together 3 times. Beat egg whites until stiff but not dry. Beat cream until stiff and fold into egg whites with vanilla. Fold sifted dry ingredients gradually into whipped cream mixture. Do not beat or stir. The batter will be smooth if dry ingredient are folded in gradually. Pour into a greased tube pan(9"pan) lined with greased paper ( I think this is parchment paper) and bake in moderate oven 350 for 40 to 55 minutes. Makes one 9" cake.
