Citrus Vinaigrette

Juice of 1 lemon and zest
Juice of 1 lime and zest
Juice of 1 orange and zest
½ cup extra virgin olive oil

In a small bowl toss in the first three ingredients and whisk together. Gradually whisk in the oil. Season with salt and freshly ground black pepper

Options- rice pilaf, pasta, couscous , chicken, fish or mixed salad.
