1 can Chickpeas, drained-14 oz
4 tbsp tahini or sesame paste ( I found it at Trader Joes)
2 garlic cloves, chopped ( I used a microplane)
Juice of 1 lemon
1/8 tsp ground cumin
Salt and freshly ground black pepper
In a small bowl mash the chickpeas. If you like a smoother taste put them in a blender or food processor until creamy. Mix in the tahini, garlic lemon juice (1/2 at a time), cumin. Salt and pepper to taste. It should be thick and smooth.
Note: Stir in a dash of cayenne pepper for a little added taste. Garnish with chopped parsley and paprika. You can add olive oil to the middle of the dish when served.
