3 cups of finely chopped flat leaf parsley
1/2 cup of finely chopped mint
4 or 5 finely chopped green onions ( with the green parts )
4 tomatoes medium size chopped into small cubes
3/4 cup bulgur wheat
1/2 cup lemon juice
4 tbs olive oil
Salt and freshly ground black Pepper
Soak the bulgur in cold water for an hour then drain (or follow directions of package). Mix all the ingredients together, taste and adjust seasoning if needed. Serve with lettuce leaves . You can also serve this with pita bread.
Note- You can add chopped cucumbers, zucchini, chick peas, lentils, even grilled chicken tossed with this and stuffed into a pita.
Optional cooking method for bulgur wheat - Bring 1 1/4 cups water to a boil, at 1/2 cup of bulgur wheat cover and let sit for 30 minutes or when it looks fluffy. Pour off any excess water
