Raspberry Vinaigrette

3 tbsp red wine vinegar
1 shallot, minced
¼ cup fresh raspberries
1 tbsp fresh mint, chopped
½ cup canola oil

In a small bowl toss in the first four ingredients and whisk together. Gradually whisk in the oil. Season with salt and freshly ground black pepper

Options-Asparagus, spinach, salads with feta, spinach, pork and mixed greens.
