Fast Enchilada Sauce

1 tbsp oil
1 onion, chopped well
1/2 tsp salt
3 tbsp chili powder
3 garlic cloves, use micro plane or minced
2 tsp cumin
2 tsp sugar
1 can tomato sauce (16oz)
1/2 cup water


In a skillet toss in the oil and heat on medium until hot. Toss in the onion, salt and cook until softened (about 5 min.) Toss in the chili powder, garlic, cumin, and sugar. Cook for 30 seconds. Stir in the tomato sauce and water and bring to a simmer. It should begin to thicken slightly (about 5 min.) Season with Pepper if you like.
Note- If you want a smooth sauce, strain the sauce. Its' quick and easy!
