1 cup onion
1/2 green pepper, chopped
1 tsp oil, olive or canola
4 cups water or chicken broth or use both
1 can tomato sauce (15oz)
1 can can tomatoes and green chilies
1 cup barley, quick cooking
1 tbsp cumin, ground
1/4 tsp garlic, powder
In a large pot toss in the oil, onion, and pepper and cook until onion is clear. Next toss in the remaining ingredients and bring to a boil. Reduce the heat to low and simmer for a minimum of 30 minutes. This will allow the barley to cook well. I simmer this for several hours and depending on how thick I want
it I add additional broth or water.

This is the brand of tomatoes and green chilies I use. If this is not available use whatever brand you like. |

This is the barley I use. I find it at Winco, Walmart and Safeway (Vons). Pearl barley will also work just cook it longer than 3o minutes. |
