1 onion, chopped
1 green pepper, chopped
1 Tbsp canola oil
3 garlic cloves, minced
1 chipotle pepper, chopped ( I use the peppers in adobo sauce)
1 can of kidney beans, drained
1 cup of beef broth
1/2 cup of your favorite salsa
2 tsp cumin, ground
2 tsp chili powder
2 cups pork ( I use leftover pork roast or ground pork)
In a saute pan toss in the oil green pepper, onion, and chipotle pepper on medium heat until onions are clear then add garlic and sauté for a minute. In a large pot toss in the this mixutre with the beans, broth, salsa, cumin and chili powder. Bring to a boil and then let it simmer for a minimum of 10 minutes. Then toss in the pork. Cook for another 10 minutes if using leftover pork.
If you are using fresh pork, cut in chunks and brown in a sauté pan until cooked.
Note- I let it simmer on low for at least an hour but if your looking for a quick dinner 10 minutes will work.
