Turkey Chili

This is a great recipe for leftover turkey from Thanksgiving.  I usually make my own broth and the flavors just blend wonderfully.


2 cups cooked turkey or ground turkey ( It's really great with leftover turkey)
1/3 cup onion
1 celery stalk, chopped
1 can great northern beans
1 cup fresh white corn or 1 (11oz can)
1 green chili, chopped
1 tsp cumin, ground
1/2 tsp fresh ground sea salt
2 cups broth (chicken or turkey, canned or fresh)
1 tsp canola oil

In medium size pot toss in the oil, onion and celery and cook until onion is clear about 4 minutes.  Next, toss in the rest of the ingredients and bring to a boil.  Cover and reduce heat and simmer for 30 minutes.

Note- I like to simmer this for a minimum of 30 minutes. 1 hour works for me.

oh and don't forget to sprinkle lots and lots of cheese.  We like medium cheddar.


These are the great northern beans I use.  But use whatever you have locally.
