I'm adding this recipe for all of Kirk's family. His mother made this for them and gave this to me about 20 years ago. I have not been able to make this cheesecake set properly. I have froze the canned milk and still not much luck. I hope that by posting this someone will be able too. Also, that kirk's siblings can have the recipe.
Here is the recipe for a single batch but Kirk's mom usually doubled this
Mix and set aside:
3 oz jello, red raspberry
1 cup boiling water
Beat good and set aside
8 oz cream cheese
1 cup sugar
1 tsp vanilla
Chill 1 can sweetened condensed milk or canned milk (you can freeze this and scoop it out).
Make a graham cracker crust according to the directions on the box. (You can buy graham crust now, if you want to make this quick). Pour the cream cheese mixture into the canned milk and whip ( I use an electric mixer for this). Then slowly add the jello and mix well. You can add frozen raspberries. I think she adds 1 small bag, her hand writing isn't clear. Then let it set in the refrigerator.
